Known locally as liempo, pork belly is a boneless cut of fatty meat taken from the pig's belly. This meat cut is usually used for sautéing, frying, stewing, braising, and grilling. The skinless and boneless variety can serve up some Filipino favorites like pork belly buns, pork belly casserole, adobo, pork belly tacos, bacon, and of course, pork belly roast.
